Lunch In A Bowl Savoury Green Smoothie
This Lunch In A Bowl Savoury Green Smoothie is essentially one of my favourite salads blended! It taste great too. Plus having it in a bowl makes you feel like you are having a soup. Hearty and filling. Serves 1.
Ingredients:
- Handful of baby salad leaves
- 4 sundried tomatoes – soaked to soften (place in hot water for 20 minutes)
- 4T basil – torn
- 1 ripe roma tomato
- 1/2 avocado
- 1T flax seed oil
- 1/2 red capsicum
- 2T red onion
- 1 clove garlic
- Juice of half a lemon
- Filtered water
- Pinch himalayan sea salt
- Optional: Cracked black pepper
Method:
Combine all the ingredients in a high speed blender and blend with approx 400mL of filtered water. Adjust to taste and drink immediately. If you would like to serve it warm, you can continue blending until the soup warms up or place in a pot on the stove, heating at the lowest setting. Its the right temperature when you can place a clean finger in and its not too hot or too cold. (Body temperature).
